Fleisch-Probenehmer for bacteriological sampling of carcass surfaces. Slaughterhouses (slaughterhouses, butcheries, etc.) are required to conduct regular microbiological examinations of carcasses, such as cattle, pigs, sheep, goats, and horses, as part of their operational process control and to monitor slaughter hygiene.
The samplers for carcass sampling are similar to a corkscrew. With them, a circular tissue sample of 5 cm² can be taken from the surface using the punching method (destructive method), also known as corkscrew or excision method.
The punch sample is removed from the carcass after cutting with a scalpel and tweezers.
